What are microgreens?
Microgreens are the young seedlings of edible vegetable and herbs. Microgreens can be harvested and eaten a week to 10 days after the cotyledon (part of the embryo within the seed) leaves have developed.

These tiny vegetable and herb versions only grow to a few inches and have a delicate texture vibrant color, and distinctive flavors. According to a 2012 study published in the Journal of Agriculture and Food Chemistry, they found microgreens health benefits up to 40times more nutritional than their adult counterparts.
